Crock pot Hawaiian “Chicken”

Found a sweet recipe on Pinterest for crock pot Hawaiian chicken with pineapple, BBQ sauce, etc. and now that I have my crock pot I figured I’d give it a go! My boyfriend doesn’t eat meat (and neither do I most of the time…) so I decided to use quorn brand fake chicken cutlets.

Ingredients: 1 box of quorn chicken cutlets (4 pieces,) 1 whole bottle of archer farms target brand sweet pineapple BBQ sauce, 1.5 cans of pineapple chunks in juice, and 1 bag of frozen organic broccoli.

Throw ’em all in there. Cook on high for 6 hours. Check on it and give it a stir every once and a while.

By hour four it should be looking pretty yummy…

And by hour six its a pot full of Hawaiian goodness! It was awesome, a little spicy from the BBQ sauce but super sweet still. The “meat” was so tender, I wanted to shred it with a fork and make a sandwich. Maybe next time!

Stuffed Eggplant

The other day my mom came home from the store with an eggplant and basically just said: “here.” I honestly know almost nothing about them, including how long they stay good for… so last night I decided to scrounge up some ingredients we already had in the kitchen and make stuffed eggplant!

Ingredients: 1 large eggplant, half a carton of mushrooms (I used button but whatever works,) some leftover canned corn, a few cherry tomatoes, 1 cup quinoa, and shredded cheese and spinach (not pictured)

I hollowed out my eggplant (not very neatly as you can see.) Psst…keep the insides, slice em up like fries. I’m gonna make some baked eggplant fries with them later!

Cooked my quinoa and sauteed my veggies with a little olive oil, garlic powder, and lemon pepper (yes, I was totally just pulling random spices.)

Combine quinoa and veggies and then liberally stuff into your eggplant shells. And I mean reaallly liberally! Bake at 400 for about 35 mins.

5 minutes before it was done I sprinkled the cheese on top. Aaaand…

Voila! Okay. This photo makes them look really unappetizing but I didn’t bother to take a better one because I was too busy scarfing it down! It tasted awesome. Next time I’d probably put some tomato sauce on when I do the cheese for a little more moisture.

Misadventures in Smoothie Making

I’m all about this juicing/smoothie/whatever you want to call it craze. What’s better than putting fruits and veggies together and making a whole new, super healthy entity? Yesterday I was a little strapped on ingredients but I was fiendin’ for something deliciously drinkable so I threw something together that was actually really good (but not so pretty!)

I used: mango, kiwi, spinach, coconut water, a teensy bit of plain Greek yogurt, and frozen cranberries instead of ice.

It turned out awesomely, but my cranberries didn’t all blend completely..that’s because my blender is mega old, though.

What do you guys like to throw in the blender?

Quick lunch and nannying excitement

Off to go babysit an 11 month old for what could be the beginning of a new regular nannying gig! Oh how I’ve missed it, and babies are awesome.

Realized I needed to bring food for myself about 20 minutes before I left and quickly realized that I have barely any food.

…pasta salad to the rescue! Leftover noodles, random veggies (black beans, celery, and carrots for me,) salsa, and cheese.

Voila! Not super pretty but quick easy and healthy ish. Fingers crossed my day is as simple as this!

Lately I’ve been, I’ve been cookin’ hard (I’m tooootally not referencing One Republic)

Seven months ago I became attached at the hip (started dating) a vegetarian. Previously, I had no clue how to cook anything but grilled cheese, which I would probably have burned. I still mostly suck at cooking, but I’m learning and really enjoying the process!

I made a really awesome pan-fried pepper tofu and avocado sandwich. Clearly I went a little heavy on the mayo.. but nonetheless, it was DELISH!

I’ve always had a hard time getting into avocado alone, as in not in guacamole. This wasn’t bad but I still got a little skeeved out.

Does anyone reading this (If anyone is actually reading this..) have any avocado recipes that might turn me on to it a bit more?
